Tomato rice

Tomato rice is typical Portuguese and delicious. The best thing is that it goes with everything and so easy to make.


2 onions
2 toes of garlic
2 very ripe and big tomatoes
olive oil
1 cup of rice
3 cups of water

How to prepare

Chop the onions, garlic and tomatoes. Fry everything with the olive oil in the pan until the onions are soft. Next you add the rice and a good pinch of salt. Stir and fry for a moment and then put everything on a low fire. Add 3 cups of water, use the same measure as the rice.

Put the lid on the pan and put it on very low fire and forget about it. Don’t stir! After 10-15 minutes check if the rice is cooked. If it is, switch of the fire and cover the pan again with the lid. Wait for 5 minutes.

Add before serving fresh coriander. Enjoy!
